Tender asparagus spears are roasted with salty Serrano ham and drizzled with a rich Mahón cheese sauce.

How to Make It
- Preheat the oven to 400°F (200°C). Cut Serrano ham slices in half lengthwise to create 2 long strips from each slice.
- Wrap each asparagus spear with Serrano ham. Place on a baking sheet and drizzle with extra-virgin olive oil.
- Place the baking sheet in the oven and bake for 10 to 12 minutes, or until asparagus is tender.
- Meanwhile, heat a small saucepan over medium-high heat. Add heavy cream and bring to a boil. Boil, stirring constantly, for 1 minute.
- Add Mahón. Cook, stirring constantly, for 3 to 5 minutes, or until a smooth consistency forms. Remove from heat.
- To serve, drizzle Mahón sauce over baked asparagus spears and then sprinkle with smoked paprika and black pepper.
