Ingredients
- 2 tsp olive oil
- 2 chicken-apple sausage links or two 4-inch pieces smoked turkey sausage
- 1 medium green sweet pepper, sliced
- 1 medium onion, sliced
- 1 cup grape tomatoes
- 4 cloves garlic, minced
- 1 tsp dried oregano, crushed
- 3 Tbsp light mayonnaise or salad dressing
- ½ tsp packed dark brown sugar
- ½ tsp yellow mustard
- 4 whole wheat hot dog buns, lightly toasted
How to Make It
- Coat a 3- to 4-quart slow cooker with cooking spray. In a medium nonstick skillet heat 1 tsp. of the olive oil over medium heat; add sausage. Cook sausage until browned on all sides, turning links frequently.
- Add the remaining 1 tsp. oil, the sweet pepper, onion, tomatoes, garlic, and oregano to slow cooker, tossing until combined. Arrange sausages on top of mixture in cooker.
- Cover and cook on low-heat setting for 6-½ to 7 hours or on high-heat setting for 3 to 3-½ hours.
- Meanwhile, for sauce, in a small bowl whisk together mayonnaise, brown sugar, and mustard; cover with plastic wrap. Chill until serving time.
- To serve, spoon about 1⁄3 cup of the vegetable mixture into each bun. Cut each sausage piece in half lengthwise; place each half, cut side down, on top of vegetables. Spoon sauce over sausage.
