Ingredients
- 1 lb 5 oz (600 g) skinless salmon filet, cubed
- 5 oz (150 g) smoked salmon, chopped
- 2 fresh egg yolks
- 2 tbsp Dijon mustard
- 1 tbsp maple syrup
- 2 tbsp freshly squeezed lemon juice
- 2 green onions, finely sliced
- 2 tbsp chopped fresh chives
- 2 tbsp chopped fresh cilantro
- 2 tbsp chopped fresh parsley
- ΒΌ cup (60 ml) olive oil
- Seasoning to taste
- 18 endive leaves
- Cilantro, coarsely chopped, for garnish
- Lemon wedges
How to Make It
- In a bowl, mix salmon, egg yolks, mustard, maple syrup, lemon juice, green onions, chives, cilantro and parsley.
- Slowly add olive oil and mix. Season to taste.
- Divide mixture among endive leaves. Garnish with cilantro and serve with lemon wedges.
- Serve with raw vegetables.
