Ingredients
- 1 whole chicken (2 to 3 lbs/1 to 1.5 kg)
- 2 lemons, cut in wedges
- 3 sprigs fresh thyme
- 5 cloves garlic, halved
- 1 tbsp olive oil
- 3 sprigs fresh rosemary
- 3 sweet potatoes, cubed
- 2 stalks celery, sliced on the diagonal
- 2 red onions, cut in eighths
- Seasoning to taste
- 1 lemon, cut in wedges, for serving
How to Make It
- Position rack in center of oven and preheat to 350°F (180°C).
- Stuff chicken with lemon wedges, thyme and garlic. Truss the bird and place in a large cooking dish.
- In a bowl, combine oil, rosemary, sweet potatoes, celery and onions. Season to taste and spread mixture around chicken. Cook in center of preheated oven for about 1 hour and 40 minutes until the juices run clear.
- Empty stuffing and carve chicken.
- Serve immediately with sweet potato mixture and lemon wedges.
