Ingredients
Rhubarb Filling
Topping
- 0.66 cup oatmeal (not instant)
- 0.33 cup brown sugar
- 0.33 cup pecan or walnut halves
- 2 tbsp canola oil
How to Make It
- Preheat oven to 400 degrees.
- Coat a 13-by-9-inch baking dish with cooking spray.
- Toss all rhubarb filling ingredients together and allow fruit to macerate for about 15 minutes.
- Place all topping ingredients into the bowl of a food processor. Process until mixture just holds together.
- Spoon rhubarb mixture into the baking dish. Cover with topping mixture.
- Bake 35-40 minutes until top is browned and mixture is bubbling.
