    How to Make Radishes with Cumin Butter Sauce

    The Keto Paleo Kitchen The Easy Way to Shift Your Diet RatiosInstead of using carb-loaded potatoes, radishes can provide a wonderful comforting side dish! Try these braised radishes delicately infused with nutty and tangy cumin and you may have a new favorite side dish.

    • Yield: 4 Servings
    • Preparation Time: 20 Minutes

    Ingredients

    • 20 medium radishes and greens, optional
    • 1 tbsp (4 g) whole cumin seeds 2 tsp (5 g) cumin powder
    • 1 cup (240 ml) homemade chicken or beef broth
    • ¼ tsp unrefined sea salt
    • ¼ tsp black pepper
    • ¼ cup (60 ml) olive oil
    • 2 tbsp (28 g) butter
    • 1 tsp lemon zest
    How to Make It
    1. Wash the radishes and trim their ends.
    2. In a medium saucepan, toast the cumin seeds on medium heat until fragrant, about 30 seconds. Add the radishes, broth, salt and pepper to the pan, and bring to a gentle simmer. Simmer on low heat with a closed lid until the radishes are tender, about 8 to 10 minutes. Remove the radishes from the pot, and set aside the cooking liquid. Cut the radishes in quarters.
    3. In a medium skillet, heat the olive oil over high heat. When hot, sauté the radishes until lightly browned on all sides, about 2 minutes per side.
    4. Put the saucepan with the cooking liquid back on the stove and cook on high heat until the liquid reduces by half, about 3 minutes. Add the radish greens, if desired.
    5. Whisk in the butter with a wire whisk, then add the lemon zest. Serve the radishes warm, drizzled with the reduced butter sauce.
