I love making these muffins because my kids can choose which pizza toppings they prefer to add to their muffins. Fun and individualized!
Ingredients
- 7 large eggs
- 1 cup sour cream
- 1 tablespoon dried oregano leaves
- ½ teaspoon baking powder
- ½ teaspoon fine sea salt
- 6 ounces mozzarella cheese, shredded
- 3 tablespoons grated Parmesan cheese
- ¼ cup chopped onions
- ¼ teaspoon finely chopped garlic
Add-Ins (Optional)
- ½ cup sliced olives
- ¼ cup diced green peppers
- ¼ cup sliced mushrooms
- ½ cup chopped or crumbled precooked Italian sausage (omit for vegetarian)
- Pizza Spice Mix, for garnish (optional)
- Marinara sauce, warmed, for serving (optional)
How to Make It
- Preheat the oven to 350°F. Grease a 24-well mini muffin pan or a 12 well muffin pan.
- Beat the eggs in a large mixing bowl. In another bowl, combine the sour cream, oregano, baking powder, and salt, then add the sour cream mixture to the bowl with the eggs. Blend with a hand mixer until well combined.
- Add the mozzarella, Parmesan, onions, garlic, and pizza add-ins of your choice. Stir with a spoon until well combined.
- Pour the batter into the greased muffin cups, filling each about two thirds full. Sprinkle with Pizza Spice Mix, if desired.
- Bake until puffy and lightly browned, 10 to 12 minutes for mini muffins, 12 to 15 minutes for regular-sized muffins. The muffins are done when a knife inserted in the center comes out clean. Allow to cool slightly in the pan, then transfer to a serving platter.
- Serve with marinara sauce either spooned on top or on the side for dipping, if desired. Store extras in an airtight container in the fridge for up to 3 days. Reheat leftovers in a 350°F oven for 3 minutes or in the microwave for 30 seconds, or until heated through.
