How to Make It
- In a saucepan over medium-high heat, cook sweet potatoes in boiling water for about 20 minutes or until tender. Drain and mash potatoes.
- Meanwhile, in a bowl, combine onion, salmon, egg, mustard, dill, thyme and Tabasco. Add potatoes and season to taste.
- Using your hands, shape mixture into 8 patties, ¾ inch (2 cm) thick.
- In a skillet, heat oil over medium heat. Place patties in skillet and cook for 5 minutes on each side.
- Serve with lemon wedges.
