    How to Make Miso Beef

It is fantastic when combined with meats and vegetables. There are several varieties to choose from; white miso is the mildest in flavor. Miso contains a lot of salt, so be cautious when seasoning with additional salt.

    • Yield: 4 Servings

    Ingredients

    • ¾ (85 grams) stick butter, room temperature
    • 3 teaspoons (18 grams) white miso paste
    • 1 pound (454 grams) flank steak
    • 1 pound (454 grams) spiral or matchstick-sliced fresh zucchini (about 4–5 small ones)
    • ¼ cup water
    • ½ tablespoon (7 grams) toasted sesame oil
    • Salt and pepper to taste
    How to Make It
    1. Mix the butter and miso paste together until completely combined. Cover and set aside.
    2. Season the flank steak with salt and pepper. Grill the flank steak on a gas or charcoal grill. Cook until the meat has reached 160°F or medium well-done with a slightly pink center. Remove the meat from the grill and cover with foil. Allow it to rest for 15 minutes.
    3. Place the zucchini in a glass bowl and add ¼ cup water. Cover the bowl with a plate and steam in a microwave for two to three minutes or until the zucchini is bright green and slightly softened. Drain excess water and toss the zucchini with the sesame oil.
    4. To serve, slice the steak across the grain into very thin slices. Divide steak and zucchini into four equal portions. Place steak on top of zucchini and top with one-quarter of the butter mixture (about 1½ tablespoons).
