We eat with our eyes, and if you make food fun, kids are likely to enjoy it, too! This recipe is a perfect example. My son Kai adores savory food. He doesn’t have much of a sweet tooth, and when I asked him what he wanted for his birthday cake last year, he said meatloaf. So I made him these meatloaf cupcakes. (Because both my other son, Micah, and I have a sweet tooth, I also made my Cinnamon Swirl Cheesecake from The Ketogenic Cookbook, making everyone happy!)
Ingredients
For Garnish
- Guacamole or sour cream
- 6 cherry tomatoes
How to Make It
- Preheat the oven to 350°F. Generously grease a 6-well jumbo cupcake pan with coconut oil or butter.
- In a large bowl, use your hands to mix together the ground beef, eggs, cheese, salsa, cilantro (if using), taco seasoning, and garlic. Form the mixture into six 3-inch balls and place in the wells of the cupcake pan.
- Bake for approximately 20 minutes, or until the internal temperature reaches 160°F.
- Remove from the oven and top with guacamole or sour cream for the frosting and a cherry tomato!
