Ingredients
For the lima bean purée
- 1 tbsp olive oil
- 1 small red onion, finely minced
- 5 cloves garlic, minced
- 1 red pepper, thinly sliced
- 1 can (19 oz/540 ml) lima beans, drained and rinsed
- ½ lemon juice
- 3 tbsp chopped fresh parsley
- Thyme and sage, to taste
- Salt, pepper and paprika, to taste
For the wraps
How to Make It
- In a skillet, heat oil over high heat and sauté onion, garlic and pepper for about 5 minutes. Let cool for 5 minutes.
- Add lima beans, lemon juice, parsley, herbs and seasonings. Transfer to a blender and purée. Add water until desired consistency.
- Divide mixture among collard green leaves. Add beets, alfalfa sprouts, avocado and walnuts. Tuck ends inward and roll.
