Ingredients
- 2 cans (each 19 oz/540 ml) lima beans, drained and rinsed
- 1 lemon juice
- ¼ cup (60 ml) chopped fresh parsley
- ¼ cup (60 ml) chopped fresh cilantro
For the caramelized onions
- 3 tbsp olive oil
- 2 red onions, sliced
- 1 clove garlic
- 1 tsp whole cumin seeds
- Seasoning to taste
How to Make It
- In a skillet, heat oil over medium-high heat and caramelize onions and garlic, stirring constantly, for about 20 minutes. Reduce heat to medium and continue cooking another 5 minutes or until onions are thoroughly caramelized. (Add water if onions stick to skillet.) Add cumin and season to taste.
- In a food processor, purée lima beans. Add caramelized onions, lemon juice, parsley and cilantro. Mix until slightly lumpy texture is obtained. Season to taste.
- Serve with Kale Chips.
