These lemony tarts are all you need to fulfill your dessert cravings.
Ingredients
- 0.33 cup lemon juice
- 0.66 cup raspberries
- 1 cup coconut milk
- 2 Teaspoon lemon rind
- 6 eggs
- 1 cup walnuts
- 1½ cups almonds
- 1½ cup dates
How to Make It
- In a food processor, combine the almonds, walnuts, and dates till you have a coarse texture. Line the tart pan with baking paper. Press the pastry along the bottom and the sides and refrigerate.
- For the filling, take a pan, add in the lemon juice, coconut milk, lemon rind and honey and simmer it on a low flame for 2 minutes. Slowly add in the beaten eggs to the mixture.
- Stir vigorously till it forms a nice smooth texture. Add in some more honey if needed. Leave it to cool. Remove the pastry case and pour the lemon filling slowly into the pastry case.
- Bake it at 180 Degrees Celsius for 30 minutes. Top it with strawberries while serving.
