I used to make Paleo taco salads a few years ago, and while they’re still incredibly tasty, there’s something even better about adding shredded cheese and sour cream. This is one of my go-to easy dinners that takes almost no planning to put together
Ingredients
- 1 tablespoon olive oil
- ½ white onion, diced
- 1 garlic clove, minced
- 1 pound ground beef
- 1 small packet taco seasoning (or 1½ teaspoons chili powder combined with 1½ teaspoons ground cumin)
- Salt
- Freshly ground black pepper
- 2 heads romaine lettuce, chopped
- ½ cup shredded Mexican blend cheese
- ¼ cup salsa
- 1 avocado, quartered and sliced
- ¼ cup sour cream
- 4 lime wedges
How to Make It
- In a large saucepan over medium heat, heat the olive oil.
- Add the onion and garlic. Sauté for 5 to 7 minutes until the onion is softened and translucent.
- Add the ground beef and cook for 7 to 10 minutes until browned. Season with the taco seasoning, salt, and pepper. Drain and set aside.
- Assemble the salads in four bowls: Start with lettuce. Top with seasoned ground beef. Sprinkle with cheese and add salsa, sour cream, and sliced avocado, and serve with a lime wedge.
