Bagels are a favorite, not only for breakfast or a snack, but for a tasty sandwich as well. You will love the rich flavor of these bagels and their versatility. They are also a great way to add fiber to your diet.
Ingredients
- 1 cup (112 g) coconut flour
- ½ cup (68 g) flax seeds, finely ground
- 1 cup (240 ml) boiling water
- 4 egg whites
- ½ cup (90 g) hemp hearts
- ½ cup (75 g) sesame seeds
- 1 tbsp (5 g) aluminum-free baking powder
- Sesame seeds or poppy seeds, for sprinkling
How to Make It
- Preheat the oven to 350°F (177°C). Place a sheet of parchment paper on a cookie sheet.
- In a large bowl, mix the coconut flour and flax seeds. Pour the boiling water over the flours and mix well, then set aside to rest.
- Using an electric or manual whisk, in a medium bowl blend the egg whites until stiff peaks form.
- Add the hemp hearts, sesame seeds and baking powder to the coconut flour mix and mix well.
- Using an electric whisk or a wooden spoon, add the egg whites to the dry ingredients and mix well, without overmixing. The dough should still be somewhat crumbly but will stick together when formed into a ball.
- Form the dough into six balls. Holding a ball in one hand, stick your thumb through it, making a hole, then place the dough on the cookie sheet and form it into a bagel shape, using your fingers. Sprinkle with some sesame seeds or poppy seeds so it looks pretty.
- Bake for about 55 minutes, or until the bagels are golden on top and dry inside. You can use a wooden toothpick to check. It will be done when the toothpick comes out clean.
- Let cool inside the oven for an extra-crunchy top.
