Ingredients
- 1 can (19 oz/540 ml) lima beans, drained and rinsed
- 2 cups (500 ml) chopped kale, stems removed
- 2 cups (500 ml) chopped Swiss chard
- 1 small red onion, minced
- 1 pear, cored and sliced
- ½ pink grapefruit, cut in segments
- 1 cup (250 ml) sliced strawberries
- 1 cup (250 ml) blueberries
For the vinaigrette
- 1 tbsp maple syrup
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 2 tsp Dijon mustard
- 1 lemon juice
- Seasoning to taste
How to Make It
- In a salad bowl, mix all ingredients for salad.
- In a smaller bowl, whisk together ingredients for vinaigrette.
- Drizzle vinaigrette on salad before serving and toss to coat.
