One of the first wholesome health foods to hit the market in the 1960s, crunchy granola soon became a mainstream staple. I love it layered with fruit in a yogurt parfait perfect for special Sundays and houseguests.
Ingredients
- 4 cups oatmeal (not instant)
- ½ cup raw wheat germ
- ½ cup sesame seeds, unhulled
- 1 cup coarsely chopped raw almonds with skins
- ¼ cup chopped walnuts
- ½ cup honey or maple syrup
- 2 tbsp canola oil
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ cup chopped dried apricots
- ½ cup dried cranberries
How to Make It
- Preheat the oven to 350 degrees and lightly spray a large, shallow pan with cooking spray.
- In a large bowl, mix together all ingredients except the dried fruit.
- Transfer the mixture to a sheet pan and bake for 30 to 35 minutes, stirring occasionally, until golden.
- Remove granola from the oven and cool. Add dried fruits. Transfer to a sealed container and store in a cool, dry place for up to three weeks.
