Ingredients
- Coconut oil, for the pan
- 6 slices ham, about 4 inches in diameter
- 6 large eggs
- ½ teaspoon fine sea salt
- ¼ teaspoon fresh ground black pepper
- 2 tablespoons chopped fresh chives, for garnish
- 6 tablespoons Easy Basil Hollandaise (optional)
How to Make It
- Preheat the oven to 400°F. Grease a 6-well muffin tin.
- Place 1 slice of ham in each well. Break an egg into each ham cup. Sprinkle the eggs with the salt and pepper.
- Bake for 12 minutes, or until the egg whites are set but the yolks are still a bit runny.
- Serve garnished with chopped chives. To up the keto content, serve each cup with a tablespoon of basil hollandaise, reheated (if necessary).
