Ingredients
- ½ pound Halloumi cheese, cut into ¼-inch-thick slices
- 1 tablespoon MCT oil or melted unsalted butter
- 6 slices prosciutto
- ¼ cup pesto
- ½ cup chopped yellow tomato
- Fresh marjoram or basil leaves, for garnish (optional)
How to Make It
- Preheat a grill or panini maker to medium-high heat.
- Brush each side of the cheese slices with MCT oil or melted butter. Place onto the hot grill or panini maker for 3 minutes on each side, or until golden brown with grill marks. Meanwhile, place the prosciutto onto a serving platter, leaving a little space between each slice.
- Remove the cheese slices from the grill and divide equally among the prosciutto. Sprinkle evenly with the pesto and yellow tomato. Sprinkle a few fresh marjoram or basil leaves around the platter, if desired. Serve warm.
