I enjoy serving this preparation of halibut on a bed of BLT Coleslaw, using purple cabbage to give the dish a beautiful array of colors. But any bright, crunchy, summery side will do. For an added touch of color, sprinkle with some hibiscus sea salt.
Ingredients
For the Avocado Cream
- 1 avocado, peeled, halved, and pitted
- 1 tablespoon plus 1 teaspoon lime juice
- ¼ cup fish bone broth or water, plus more if needed
- ¼ cup mayonnaise
- 3 tablespoons coarsely chopped green onions
- ¼ teaspoon smoked paprika
- ¼ teaspoon fine sea salt
- 0.12 teaspoon fresh ground black pepper
- 4 (8-ounce) halibut steaks
- Fine sea salt and fresh ground black pepper
- MCT oil, for brushing the fish
- Chopped fresh cilantro, for garnish (optional)
- 2 lime slices, cut into half-moons, for garnish (optional)
How to Make It
- Preheat a grill to medium-high heat. While the grill is heating up, make the avocado cream
- Place the avocado, lime juice, broth, mayonnaise, green onions, paprika, salt, and pepper in a blender. Puree until very smooth, adding more broth if the sauce is too thick. Set aside for serving.
- Season the halibut generously with salt and pepper. Brush both sides of the fish with generous amount of MCT oil. Grill for 4 to 5 minutes per side, or until the fish barely flakes. Remove from the heat.
- Serve with generous amount of avocado cream. Garnish with fresh cilantro and a lime slice if desired.
