Granola clusters are baked with cinnamon and nutmeg, and layered with soft yogurt cream and plump blackberries.
Ingredients
- ¾ cup raw pecans
- ¾ cup raw walnuts, chopped
- ½ cup slivered almonds
- ¼ cup raw shelled pumpkin seeds
- 2 cups raw hemp seeds
- ¼ cup salted butter, melted
- 1 tbsp raw honey
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tsp pure vanilla extract
- 1 cup full-fat plain yogurt
- ½ cup heavy whipping cream
- 6 oz (170 g) fresh blackberries
How to Make It
- Preheat the oven to 300°F (150°C). In a large bowl, combine pecans, walnuts, almonds, pumpkin seeds, and hemp seeds.
- In a medium bowl, combine melted salted butter, honey, cinnamon, nutmeg, and vanilla extract. Pour over nut mixture and stir to combine.
- Spread mixture evenly on a rimmed baking sheet. Bake for 10 minutes.
- Remove granola from the oven and stir. Return to the oven and bake for an additional 8 to 10 minutes, or until deep golden brown and fragrant. Remove from the oven to cool completely.
- While granola bakes, whisk full-fat yogurt and heavy whipping cream together until smooth.
- To serve, layer granola and yogurt cream in parfait glasses or Mason jars, and top with blackberries.
