Ingredients
- 6 cups potatoes cut into ¾-inch cubes
- 1 large onion, chopped (1 cup)
- 1 cup water
- 0.66 cup cider vinegar
- ¼ cup packed brown sugar
- 2 Tbsp quick-cooking tapioca
- ½ tsp salt
- ¼ tsp celery seeds
- ¼ tsp black pepper
- 4 slices turkey bacon, cooked according to package directions and chopped
- Sliced green onions (optional)
How to Make It
- In a 3-½- or 4-quart slow cooker combine potatoes and onion. In a medium bowl combine the water, vinegar, brown sugar, tapioca, salt, celery seeds, and pepper; pour over all in cooker.
- Cover and cook on low-heat setting for 8 to 9 hours or on high-heat setting for 4 to 4-½ hours. Just before serving, stir in bacon. If desired, sprinkle with sliced green onions.
