Ingredients
- 2 tablespoons coconut oil or unsalted butter
- 6 large eggs, beaten
- 1 cherry tomato, finely diced (optional)
- 2 tablespoons chopped fresh chives
- ½ teaspoon fine sea salt
- ½ teaspoon fresh ground black pepper
- 2 2 tablespoons crème fraîche or sour cream
- 4 ounces Gravlax, chopped into small pieces
How to Make It
- Melt the oil in a small saucepan over medium-low heat.
- In a large bowl, combine the eggs, diced tomato, if using, chives, salt, and pepper.
- Pour the egg mixture into the saucepan and cook for a few minutes, whisking constantly. Serve immediately.
- When the eggs reach the texture you like, remove from the heat and add the crème fraîche, mixing well. Add the gravlax and stir gently.
