How to Make It
- Preheat oven to 170°C (fan-forced). Spray 6 x 125 ml (½ cup) non-stick muffin tin holes with cooking spray. Lay 1 sheet of filo on a flat surface. Spray with cooking spray. Fold pastry into quarters and use it to line 1 muffin tin hole, allowing pastry to overhang. Repeat with remaining filo sheets and cooking spray.
- Put custard powder in a medium bowl. Add milk, eggs, vanilla and sugar and whisk to combine. Arrange fig slices over pastry bases. Pour custard mixture over fig. Bake for 20-25 minutes or until set.
- Remove tarts from tin and put on serving plates. Serve warm or at room temperature.
