Ingredients
- 8 cups (2 liters) vegetable broth
- 1 cup (250 ml) chopped kale, stems removed
- 1 leek, sliced
- 1 cup (250 ml) carrots, cut in small sticks
- 1½ cups (375 ml) whole mushrooms
- 1 red pepper, diced
- 1 small red onion, minced
- 3 green onions, minced
- 4 cloves garlic, minced
- 1 tbsp minced fresh ginger
- 1 cup (250 ml) shelled frozen edamame
- 1 tbsp miso
- Seasoning to taste
How to Make It
- In a saucepan over medium heat, bring all ingredients to a boil except edamame, miso and seasonings. Cover and let simmer on medium heat, about 25 minutes.
- Add edamame and continue cooking for 7 minutes.
- Add miso and season to taste.
