My dad and I have a very special connection. We bond over a lot of things, including a love of bow hunting, which he taught me how to do. He made this simple dish for me at his cabin ten years ago, and it is still a crowd-pleaser at parties! I modified his recipe to eliminate the sugar and soy sauce to make it keto-friendly. He now follows this recipe.
Ingredients
Marinade
How to Make It
- In a bowl, mix together the marinade ingredients. Add the tenderloin pieces, toss to coat in the marinade, cover, and place in the refrigerator to marinate for at least 2 hours or overnight.
- Place an oven rack in the top position and preheat the oven to broil. While the oven is heating up, assemble the bites
- Cut the bacon slices in half crosswise. Take a piece of marinated meat and wrap it with a halved bacon slice. Secure with a toothpick and place on a rimmed baking sheet. Repeat with the rest of the meat and bacon.
- Place the baking sheet under the broiler. Broil for 5 minutes for medium-rare or until done to your liking (they will continue to cook after you remove from the oven). Serve with Green Goddess Dressing, if desired.
