Ingredients
- 2 large cucumbers, very thinly sliced
- ¼ cup thinly sliced red onions
- 1½ tablespoons fine sea salt
- 1 cup coconut vinegar or apple cider vinegar
- ¼ cup water
- ¼ cup MCT oil or other mild oil, such as macadamia nut or avocado oil
- ¼ cup Swerve confectioners’-style sweetener or equivalent amount of liquid or powdered sweetener
- 2 tablespoons chopped fresh dill, or 2 teaspoons dried
- teaspoons grated fresh ginger (optional)
How to Make It
- In a colander over a sink, toss the cucumbers and onions with the salt. Let sit and drain for 10 minutes. Press the liquid out of the vegetables and rinse well with cold water, then drain well.
- In a medium-sized bowl, combine the vinegar, water, oil, and sweetener and stir well. Add the cucumbers and onions and toss to coat. Stir in the dill and the ginger, if desired.
