Ingredients
- Nonstick vegetable cooking spray
- 1 package (10 ounces) frozen chopped spinach
- 0.33 cup chopped onion
- 1 clove garlic, minced
- 1 cup (4 ounces) shredded reduced-fat mozzarella cheese
- 2 tablespoons allpurpose flour
- ½ cup (about 2 ounces) chopped honey roasted ham
- ¼ teaspoon nutmeg
- Pinch red pepper flakes
- 2 egg whites
- 1 egg yolk
- 1 cup fat-free (skim) milk
- Salsa (optional)
How to Make It
- Preheat oven to 350°F. Coat 8-inch square baking pan with nonstick vegetable cooking spray. Meanwhile, defrost spinach; squeeze dry to remove excess water; set aside.
- Place onion and garlic in nonstick skillet and cook and stir until soft, about 1 to 2 minutes; set aside.
- In large bowl combine cheese, ham, flour, nutmeg and red pepper flakes; add spinach, onion and garlic; mix thoroughly.
- In medium bowl whisk egg whites, egg yolk and milk until foamy; combine with cheese mixture; mix well. Pour mixture into prepared baking pan. Bake about 40 minutes or until center is firm.
- Remove baking pan from oven; cut into 4 (4-inch) squares; serve quiche over gently warmed salsa, if desired.
