This recipe is a favorite of many of my clients; they tell me that it reminds them of KFC coleslaw, which is creamy and sweet. If you prefer your coleslaw less sweet, just omit the erythritol. Add a few quartered yellow cherry tomatoes for a colorful garnish, if desired.
For the Dressing
- ½ cup mayonnaise or Copycat Baconnaise
- 0.33 cup powdered erythritol
- ¼ teaspoon stevia glycerite (optional)
- ¼ cup dill pickle juice
- 2½ tablespoons lemon juice
- ½ teaspoon celery seeds
- ½ teaspoon fine sea salt
- 0.12 teaspoon fresh ground black pepper
How to Make It
- In a large bowl, combine the cabbage and onion. Set aside.
- In a separate bowl, combine the ingredients for the dressing and mix until well combined.
- Pour the dressing over the cabbage and onion and gently stir to coat in the dressing.
- Refrigerate for 1 hour before serving.
