A quick dish with punchy flavors. Cinnamon and ginger, both from China, have a reputation for health benefits that science is now investigating.
Ingredients
- 1 lb 2 oz (500 g) lean steak, thinly sliced
- 2 tsp ground cinnamon
- 1 tbsp sunflower oil
- 1 onion, sliced
- 2 in (5 cm) piece of fresh ginger, peeled and shredded
- 1 red chile, seeded and finely chopped
- 2 garlic cloves, finely chopped
- 1 tbsp fish sauce
- 1 tbsp sesame oil
- 7 oz (200 g) mixed exotic mushrooms, such as oyster, shiitake, and hon shimeji, trimmed or chopped
- 7 oz (200 g) snow peas
- 14 oz (400 g) medium or thick straight-to-wok udon noodles

- use gluten-free noodles
How to Make It
- Put the steak in a bowl, sprinkle over the cinnamon, and stir to coat. Heat the sunflower oil in a wok, add the onion, and stir-fry over high heat for 1 minute. Add the ginger and chile and stir-fry for another minute.
- Now add the steak, garlic, fish sauce, and sesame oil and continue to cook, stirring, until the meat is no longer pink. Add the mushrooms and snow peas and continue to stir-fry for another 1–2 minutes.
- Add the noodles and stir-fry for about 3 minutes until the noodles become sticky. Serve immediately.
