Halvah is a soft dessert that is similar in texture to fudge. It’s made with pure sesame paste and normally with honey or sugar. You will not be able to tell the difference with this sugar-free version!

How to Make It
- Line an 8 x 8 inch (20 x 20 cm) baking dish with parchment paper.
- In a small saucepan, mix the sweetener and the water and slowly heat until the temperature reaches 245°F (118°C), about 3 minutes.
- In another small saucepan, over low heat bring the tahini and salt to 120°F (49°C).
- In a small bowl placed in a larger bowl of hot water, melt the chocolate with the vanilla extract.
- When the sweetener syrup is at the correct temperature, slowly add it to the tahini, in a slow and steady stream, mixing it slowly with a spatula. The mixture should not crumble and should reach a silky smooth consistency.
- Pour the tahini mixture into the prepared pan, then add the melted chocolate on top and carefully swirl in, if desired, using the back of a spoon or a chopstick. Do not overmix. Cool to room temperature then refrigerate overnight to allow sugar crystals to form.
- This can be stored in the refrigerator for up to a month.
