This is old-school coronation chicken which I love meets the super-cool Thai dish known as laab. Basically it’s a sweet/salty/hot/sour chicken and mango mixture, which you serve spooned on to lettuce leaves so doing away with high-cal crackers or bread. I love that this is so tasty yet really low in calories.
Ingredients
- 2 cooked chicken breasts, diced
- 1 mango, peeled and finely diced
- 4 spring onions, finely sliced
- 1 tbsp soy or fish sauce
- ½ lime juice and zest
- ½ tsp chilli powder
- ½ tsp mild curry powder, shopbought or (optional)
- 3 little gem lettuces leaves
How to Make It
- Put the diced chicken and mango in a bowl and add the spring onions. Whisk together the soy or fish sauce with the lime juice and zest, chilli powder and curry powder, if using. Taste and season with salt and pepper. Pour this dressing over the chicken and stir thoroughly to combine.
- To serve, spoon the chicken mixture on to little gem leaves and garnish with a few coriander and mint leaves.
