- ¼ cup extra virgin olive oil
- 0.66 cup water
How to Make It
- Add the water and asparagus to a large skillet and set over medium heat.
- Cook about 10 minutes until the asparagus softens. Drain water from the pan and return to the stove over low heat.
- Add the olive oil, onion, garlic and tomatoes to the asparagus and mix well to combine. Top with grated cheese and cook for another 1-2 minutes until the cheese is melted.
- I’d recommend pairing this with one of the white fish dishes.
