Crispy chicken wings are covered in a hot buffalo sauce and served with crunchy celery and a blue cheese dressing.
Ingredients
- 2 lb (1 kg) chicken wings and drummettes
- 4 oz (110 g) blue cheese, crumbled
- ¾ cup mayonnaise
- ¼ cup heavy cream
- ¼ cup sour cream
- 1 tbsp lemon juice
- ¼ tsp freshly ground black pepper
- 1 tsp sea salt
- 6 tbsp unsalted butter, cut into cubes
- ¼ cup hot pepper sauce
- 4 celery stalks, cut into sticks
How to Make It
- Preheat the oven to 400°F (200°C). Cut a piece of parchment paper just large enough to line a rimmed baking sheet.
- Spread chicken wings, skin side up, evenly over parchment on baking sheet. Bake for 45 to 50 minutes, or until wings are cooked through and skin is crisp.
- While wings cook, combine blue cheese, mayonnaise, heavy cream, sour cream, lemon juice, black pepper, and ½ teaspoon sea salt in a small bowl. Refrigerate dressing for later use.
- Heat a small saucepan over low heat. Add unsalted butter. When butter melts, whisk in hot pepper sauce and remaining ½ teaspoon sea salt. Remove sauce from heat.
- When wings are done, transfer to a large bowl along with sauce and toss to coat.
- Serve wings alongside blue cheese dressing and celery sticks.
