How to Make It
- In a large saucepan over medium heat, combine all ingredients except seasonings and basil for garnish. Cook for about 30 minutes. Remove from heat, remove bay leaf and let cool.
- In a blender (or directly in pot using an immersion blender), blend soup until smooth. Add water, if needed, and season to taste.
- Garnish with basil before serving.
