A warm, comforting hot cereal for a cold morning. Blend the coconut in a blender for a finer texture. If the porridge is made in advance, the coconut will be even softer. Add additional protein to make a complete meal; eggs (cooked any way) and bacon are delicious!
Ingredients
- 4 tablespoons (20 grams) or 4 dried shredded coconut, unsweetened
- 1 tablespoon (8 grams) oat bran
- 1 tablespoon (7 grams) flaxseed meal
- ½ tablespoon (7 grams) butter (reserve for the top if desired)
- ¾ teaspoon (3.5 grams) Truvia (1 packet)
- ½ teaspoon (1 gram) cinnamon
- ½ cup (60 grams) 36% heavy cream
- 1 cup water
- Pinch of salt
How to Make It
- In a small pot, add all of the ingredients and use a whisk to combine very well.
- Heat over medium-low heat until boiling. Once the mixture has boiled, remove from the heat and transfer to a serving bowl. The porridge will continue to thicken as it cools.
