Ingredients
For the Salad
- 10½ oz (300 g) spiralised butternut
- 3½ oz (100 g) wild rocket
- 2 blood oranges, peeled, sliced
- 2 oz (60 g) pomegranate seeds
For the Dressing
- 4 fl oz (115 ml) blood orange juice
- 2 fl oz (60 ml) extra-virgin olive oil
- 1 oz (25 g) chopped mint
- 1 tsp maple syrup
How to Make It
- Combine all the salad ingredients together, except the rocket.
- In a blender, whip together the dressing ingredients and pour over the salad. Leave to stand, dressed, for a minimum of 1 hour.
- Toss in the fresh rocket before serving.
