Ingredients
- 1 large onion, cut into thin wedges
- 2 lb boneless beef sirloin steak
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp black pepper
- ¼ tsp salt
- 2 medium sweet peppers, cut into thin bite-size strips
- ¼ cup lower-sodium beef broth
- 8 inch whole wheat or plain flour tortillas
- 1 cup shredded carrots
- 1 cup coarsely shredded lettuce
- ½ cup bottled salsa (optional)
- 0.33 cup purchased guacamole (optional)
- 0.33 cup light sour cream (optional)
How to Make It
- Place onion in a 3-½- or 4-quart slow cooker. Trim fat from steak. In a small bowl stir together cumin, coriander, black pepper, and salt. Sprinkle mixture over one side of steak; rub in with your fingers. Cut steak across grain into thin bite-size strips. Add beef to cooker. Top with sweet peppers. Pour broth over all in cooker.
- Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-½ to 4 hours.
- Using a slotted spoon, spoon ½ cup beef-vegetable mixture onto each tortilla. Top each serving with carrots and lettuce. Fold tortillas over filling. If desired, serve with salsa, guacamole, and sour cream.
