Ingredients
- 2 (5-ounce) Arctic char fillets, about ¾ inch thick
- ½ teaspoon fine sea salt
- ¼ teaspoon fresh ground black pepper
- 3 tablespoons coconut oil (or unsalted butter, if not dairy-sensitive)
- 2 tablespoons finely chopped onions
- ½ scant cup Olive Salsa, for serving
How to Make It
- Pat the fish dry and season it well with the salt and pepper.
- Heat the oil in a cast-iron skillet over medium-high heat. Add the onions and cook for a few minutes, until softened. Place the fillets skin side down in the skillet. Fry for 3 minutes, or until the skin is crispy and light brown. Flip and fry another 3 minutes, or until the fish is opaque and cooked through. The exact timing will depend on the thickness of the fillets.
- Transfer the fish to a serving platter and top each fillet with 3 heaping tablespoons of the salsa.
