How to Make It
- Preheat oven to 350°F.
- Season the lamb chops on both sides with salt and pepper.
- Coat the chops with mustard and sprinkle with ground almonds until covered. Reserve a bit of the almonds for the vegetables.
- Arrange the lamb chops in a roasting pan and roast for about 50–60 minutes until they acquire a golden crust.
- Coat the asparagus and cherry tomatoes with a little oil, and then sprinkle the remaining ground almonds over the vegetables. Roast next to the chops for about 15 minutes.
- Remove everything from the oven and serve hot.
