This super fast weeknight meal works equally well with ground beef if you don’t have lamb. It tastes great as leftovers!
Ingredients
- 4 slices bacon, diced
- 1 pound ground lamb
- ¼ cup diced green bell peppers (optional)
- ¼ cup diced onions
- 1 teaspoon finely chopped garlic, or cloves from ½ head roasted garlic
- 4 cups thinly sliced cabbage (about ½ head), for “noodles,” or 2 (7-ounce) packages Miracle Noodles
- 2 cups tomato sauce
- 1 teaspoon fine sea salt
How to Make It
- Fry the bacon in a large skillet over medium heat until slightly crispy, about 5 minutes. Add the lamb, bell peppers (if using), onions, and garlic and cook, stirring often to break up the meat, until the meat is browned, about 7 minutes.
- Add the cabbage “noodles” or Miracle Noodles and the tomato sauce. If using cabbage noodles, cover and simmer until the cabbage is very soft, like pasta, about 5 minutes. If using Miracle Noodles, heat for 1 minute, or until the noodles are warm.
- Season with the salt and serve.
