Besides being a great source of detox nutrients, halibut has a delicately sweet flavor. It’s a lean fish with snow-white flesh and is rated well for sustainability. Halibut is a very good source of magnesium, which improves the flow of blood, oxygen and nutrients throughout the body, and of omega-3 fatty acids and vitamins B6, B9 and B12, nutrients that increase detoxification and reduce inflammation.
Ingredients
- 1 lb fresh halibut fillets
- 1½ cups coarsely chopped fresh tarragon
- 1½ cups coarsely chopped fresh basil
- 1½ cups coarsely chopped fresh chives
- 2 cups coarsely chopped fresh parsley
- 2 tsp minced fresh ginger
- ½–1 tsp pink rock or gray sea salt
- 2 Tbsp avocado oil or extra virgin olive oil
- 2 organic lemons, zest and juice
- 2 shallots or ½ red onion, chopped
How to Make It
- Preheat the oven to 400°F.
- Cut the fillets into 4 pieces, each roughly 2-by-4 inches. Cut 4 pieces of parchment paper, each at least twice the length of a halibut piece.
- In a large bowl, combine the fresh herbs, ginger, salt and avocado oil or olive oil, and mix thoroughly. Working with 1 piece of parchment and fish at a time, spoon one-eighth of the herb mixture evenly over the paper and lay the fish on top. Sprinkle with one-quarter of the lemon zest and juice, and then top with another one-eighth of the herb mixture and one-quarter of the shallots or red onions.
- Wrap the paper around each piece of fish, folding over the edges to create a seal. Place the wrapped fillets in a baking dish and bake for approximately 35 minutes.
