Ingredients
- 2 small bell peppers, any color
- 1 cup shredded Gruyere cheese
- 2 tablespoons finely chopped parsley
- 1 medium clove garlic, minced
- 2 green onions, chopped
- 10 green olives, pitted and chopped
Optional/ Garnish
- ¼ cup whole leaf basil
How to Make It
- Preheat oven to 375°F.
- Cut off the tops of the bell peppers and remove the core and seeds. Rub the pepper with olive oil, place in a small Dutch oven, and roast for about 20 minutes. Allow to cool slightly.
- In a small bowl combine the minced garlic, green onion, parsley, and olives. Add the shredded Gruyere and mix well.
- Stuff each pepper with the cheese mixture.
- Transfer back to the oven and cook for an additional 5 minutes.
- Transfer to a serving plate, garnish with basil, and enjoy.
