Dressing
- 4 slices bacon, finely diced
- ¼ cup MCT oil
- 3 tablespoons coconut vinegar or apple cider vinegar
- 1 teaspoon Swerve confectioners’-style sweetener or equivalent amount of liquid or powdered sweetener
- Fine sea salt and fresh ground black pepper
- ½ cup Cilantro Lime Sauce, for serving (optional)
How to Make It
- Slice each head of radicchio into quarters, leaving the stem intact in order to keep the wedges together. Rinse well under cold water for a few minutes to help cut the bitterness. Drain and pat dry.
- Preheat a grill to medium-high heat or place a grill pan over medium-high heat. While the Grill or Pan is Heating, Make the Dressing
- In a large sauté pan, cook the bacon slowly over medium heat until it is crisp and golden brown, 8 to 10 minutes. Leave the bacon and drippings in the pan. Add the oil, vinegar, and sweetener and bring to a boil for a minute, then remove from the heat. Season to taste with salt and pepper.
- Drizzle the cut sides of each radicchio quarter with the dressing. Place sliced side down on the grill or grill pan and sear for 2 to 5 minutes, depending on how charred you prefer the leaves, then flip and char the other side. Remove from the heat and place sliced side up on a serving platter. Serve warm, drizzled with Cilantro Lime Sauce, if desired.
