Serve this corn with just about anything cooked on the barbecue, such as steaks, chicken, salmon, ribs and burgers. Cooking the shucked corn directly over the heat slightly chars and caramelizes the kernels very tasty!
Ingredients
- 2 Tbsp (30 ml) butter
- 1 tsp (5 ml) ground cumin
- 2 Tbsp (30 ml) freshly squeezed lime juice
- 4 cobs of corn, shucked
- salt and freshly ground black pepper to taste
- 4 lime wedges
How to Make It
- Preheat your barbecue or indoor grill to medium. Place the butter, cumin and lime juice in a small skillet over medium heat and cook just until the butter melts. Stir to combine and then remove from the heat. Place the corn on the grill.
- Cook, turning from time to time, until the corn is lightly charred and just tender, about 4 to 5 minutes. Set the corn on a platter. Brush with the butter mixture, sprinkle with salt and pepper and serve immediately, garnished with lime wedges.
