Ingredients
- 250 g softened butter
- 450 g castor sugar
- 4 extra large eggs
- 400 g cake flour
- 400 g cake flour
- a pinch of salt
- 250 ml milk
- 1 vanilla pod, split and deseeded
- 2 grapefruits zest
- 1 grapefruit, peeled and broken into segments
How to Make It
- Preheat the oven to 170 °C. Grease and line the base of a 22 × 12 cm loaf pan. To make the Batter
- Cream together the butter and sugar until thick, pale and fluffy. Add the eggs one at a time, beating after each addition. Sift together the dry ingredients. Alternately add the dry ingredients and milk to the butter mixture to form a smooth batter. Fold in the vanilla seeds and grapefruit zest. Baking and Cooling
- Spoon into the prepared loaf pan and spread out evenly using a rubber spatula. Bake for 1 hour or until golden on the top and a metal skewer inserted into the centre comes out clean. Turn out onto a wire rack and leave to cool.
