Ingredients
- 2 tablespoons (30 ml) vegetable oil
- 2 tablespoons (30 g) brown sugar
- 2 tablespoons (43 g) honey
- 2 tablespoons (14 g) flax meal
- 2 tablespoons (30 ml) water
- 1 ripe banana, sliced
- 1 teaspoon (5 ml) vanilla extract
- ½ cup (60 g) Bob’s Red Mill white or brown rice flour or sorghum flour
- 2 tablespoons (15 g) Bob’s Red Mill tapioca flour
- 1 teaspoon (2.3 g) ground cinnamon
- 1 1/3 cups (140 g) Enjoy Life granola, any flavor
- 1 cup (150 g) Enjoy Life Not Nuts! trail mix, any flavor
How to Make It
- Preheat oven to 350°F (180°C, or gas mark 4).
- With a mixer, cream together the first 7 ingredients (through vanilla). Mix in flours and cinnamon until smooth. Stir in granola and trail mix. If desired, place granola in a plastic bag and gently crush with a rolling pin into bite-size pieces. Spoon mixture into a greased 9-inch (23-cm) baking pan or greased mini muffin pan.
- Bake for 30 minutes if using the 9-inch (23-cm) baking pan or 20 minutes if using the mini muffin pan. Cool and cut into small bars or remove from muffin pan.
