I’m all for anything that helps kids eat healthy foods, so I’ve given this crisp summer salad a silly name and a few sweet surprises. Adults are also welcome to indulge!
Ingredients
- ¼ cup raisins
- 1 pound carrots, peeled
- 1 tbsp lemon juice
- 1 tbsp orange juice
- ¼ cup low-fat sour cream
- ¼ cup light mayonnaise
- 2 tbsp sugar
- ½ tsp salt
- 0.33 cups diced peaches, plums, or fresh pineapple
How to Make It
- To plump the raisins, cover with boiling water for about 5 minutes, then drain.
- Grate the carrots by hand or in a food processor with a grating blade. Transfer the carrots to a bowl, add the lemon juice and orange juice, and toss.
- In a small bowl, whisk together the sour cream, mayonnaise, sugar, and salt. Toss with the carrots. Mix in the raisins and diced fruit, and serve.
