Usually, sugar would be used in this recipe, making it too high in carbohydrates for ketogenic diets. Truvia replaces the sugar but the rest of the ingredients are the same. It tastes just as good! Serve with chicken prepared and cooked in the same way as in the Chicken Piccata recipe, but omit the piccata sauce and instead top the chicken with butter.

    Ingredients

    • 2 pound (908 grams) red cabbage (buy a slightly heavier cabbage)
    • ¼ cup (25 grams) cider vinegar
    • 1½ teaspoons (7 grams) Truvia (2 packets)
    • Pinch of salt
    • 2 bay leaves
    How to Make It
    1. Peal off the outer leaves of the cabbage and rinse the entire head under cold water. Cut it into quarters and remove the tough stem from each quarter. Shred each section in a food processor on the thickest setting. Alternatively, slice the quarters very thinly with a knife to make shreds.
    2. Combine all of the ingredients in a large stockpot. Add enough water to reach the top of the cabbage. Simmer at medium heat uncovered for at least two hours longer is better. The cabbage is ready to eat when it is very tender and most of the water has cooked off. Remove the bay leaves and serve.
