Rockfish can be a bit bland, so adding fresh herbs and lemon gives it needed zest. I like to use ingredients that add lots of nutrients and medicinal proprieties to your diet, like cilantro and garlic. I also try to combine oven batches to save energy and time. This easy baked fish recipe can be combined as a piggyback onto anything else you are baking!
Ingredients
- 1 lb (454 g) rockfish or Alaskan cod
- ½ cup (120 ml) Keto Paleo Mayo
- 3 cloves garlic, pressed
- 1 tsp fresh thyme leaves
- 1 lemon, zested
- ½ tsp unrefined sea salt
- ¼ tsp freshly ground black pepper
How to Make It
- Preheat the oven’s broiler. Place the fish fillets in a shallow oven-safe dish. In a small bowl, combine the mayo, garlic, thyme, lemon zest, salt and pepper and mix well with a fork.
- With a pastry brush or a fork, spread half the mixture on one side of the fish, then turn the fillets over, and brush with the rest of the mixture. Put the fish under the broiler for about 8 minutes, until it is just done inside and getting opaque and flaky. Do not overcook.
